Chocolate Chip Zucchini Bread

I had a wonderful co-worker who gave me a zucchini from their garden. So, obviously I had to make a recipe for you all with it! This is a new-ish recipe. I have such a passion for locally grown produce. I imagine having a house in the country with a huge vegetable garden and fruit trees and I will just make healthy recipes on the regular. I know, I am seriously the most uncool 24 year old on the planet. I own it though. The things that can’t be bought are what my heart most desires. Today, that just happened to be chocolate chip zucchini bread. It doesn’t hurt that these yummy bars will be in my fridge the moment I get back from a 20 mile long run this weekend.  

Here is what you will need:

1 cup shredded zucchini (I shredded mine in a box grater)

¾ cup coconut flour

6 eggs

½ cup chocolate chips (I used mini)

2 tbsp coconut oil (melted and cooled)

1 ripe banana

3 tbsp maple syrup (I used grade B)

1 tsp vanilla

¾ tsp baking soda

Dash of cinnamon

What to do:

1.     Preheat the oven to 350 degrees. Then stick your coconut oil in the microwave for 30 seconds and it will melt and sit it to the side. Grease an 8x8 pan and set aside.

2.     Shred your zucchini with the box grater and then press between paper towels or a cheese cloth and squeeze the water out of the zucchini. There will be quite a bit and you cannot skip this step.

3.     Next, sit your zucchini aside and put your ripe banana in a bowl and mash it with a fork until smooth mush like consistency. Once your banana is finished, add 1 egg at a time and incorporate together into a smooth mixture (I would use a whisk, or it will be hard to make into a smooth batter).

4.     Add vanilla, coconut oil, baking soda, cinnamon, and maple syrup into the mixture.

5.     After those are mixed, add coconut flour slowly, incorporating as you go. I added ¼ cup at a time and whisked the mixture as I poured in.

6.     Once you have a smooth batter add your shredded zucchini and 2/3 of your chocolate chips. Mix together and put in your 8x8 pan. Once batter is in pan, sprinkle the rest of your chocolate chips onto the top!

7.     Bake in the oven for 30-35 minutes, and then let cool on a rack. I store mine in the fridge after they cool (and you try one!)

8.     I got 16 squares total

 

These bars were such a success! They have a slight banana bread flavor, but I really like that so it didn’t bother me. I really enjoyed them cold, and they were a perfect snack before and after my long runs this week! I hope you all enjoy them, and let me know if they make it into your kitchen!
