Twice Baked Blueberry Pecan Sweet Potatoes

I LOVED THIS RECIPE! I am a sucker for fruit in savory dishes and I have been using a lot of sweet potatoes lately in recipes so this just seemed like the perfect fit for me. It was simple and quick which was what I needed the day I made these. We were going over to a friend’s house to eat dinner and I was tasked at bringing a side dish. One thing I really enjoy about living in Michigan, particularly the Ann Arbor area is that most people seem to be health conscious and open minded about trying different food and eating a (mostly) healthy diet. So, I figured these would go over well with everyone. We ate these with steak, chicken sausages, Brussels and bell peppers. 

I love the idea of loading up sweet potatoes with different flavor profiles and I have some great ideas about a more savory option that could be eaten as a meal, not just a side dish.
